Fast and Easy Stuffing for your Thanksgiving meal or any meal.

So simple and easy, using a food processor for all of the real chopping. Make in advance to keep your Thanksgiving less in the kitchen and more with the family. We had A LOT of requests for this one.


3 carrots (peeled)

3 celery stalks (trimmed)

1/2 large onion

1/2 lb sausage (mild or sage work great)

2 cups stock (poultry or veg)

1 stick salted butter


Precook sausage and reserve fat in pan.

Chop bread by hand into 1/2 cubes or use food processor. Add to cornbread when done in a large bowl.

Cut veggies in 1" chunks and put into food processor. Process to a mince (similar to a jalapeno you would put in a salsa or ceviche).

Place in bowl.

Add 1/2 cup of stock to food processor and add sausage. Process until similar to oatmeal consistency.

Place in bowl.

Heat butter, sausage and veggies with 1 cup of stock at full simmer for 2 minutes, or until butter is melted.

Pour mixture over bread and incorporate slowly. DO NOT ADD MORE LIQUID YET. Fully mix and check moisture by squeezing into a ball that holds shape. Add more stock only if it's too dry. Salt and pepper to taste.

Now you can stuff the bird or just put the stuffing in a pan. For advance, just pack into a zipper freezer bag and keep up to a month in the freezer.
