Puff Pastry treats with both savory and sweet options

Don't those look tasty? You betcha they were... now it's your turn.
We made 3 varieties and you can mix it up to your own flavors.
Apple and Brie / Portobello Mushrooms and Stilton / S'mores
Ingredients and Recipes all start with Frozen puff pastry thawed overnight in the refrigerator. 2 sheets will make 24 treats in standard muffin/cupcake trays. Each recipe below makes 8. For a dozen, increase ingredients by 50%.
Preheat oven to 400 and use the middle rack.
Apples and Brie
2 small apples (I used Honey Crisp)
1 medium carrot
1 navel orange
Block of brie (I had 1/2 lb of double cream with plenty leftover for later)
1 teaspoon honey
3 slices of prosciutto
Cut apples into 1/2 dice and place in bowl of cold water.
Shred carrot on box grater and heat on medium with 2 tablespoons of butter.
Strain apples, reserving some of the water in the bowl for later.
Add apples to the pain and sauté until soft throughout.
Zest orange and then juice it, add to pan.
(If pan goes dry, add enough water from the bowl to just cover the bottom lightly)
Cut puff pastry sheet into 12 even blocks (see video for tips)
Spray pan(s) with non-stick spray lightly.
Place pastry dough piece in each hole and push down gently, allowing it to wrinkle and fold on the sides a bit.
Cut brie into approx 1 tablespoon/1 inch cubes and place in the bottom of the hole on the pastry dough.
Once carrot/apple mixture is cooked through (8-11 minutes) place 1 teaspoon of mixture on top of each piece of brie.
Once all are done, reserve what's left to adjust any needing more filling.
Put in oven and set timer for 9 minutes.
Place prosciutto in warm pan and brown on both sides.
Remove when browned and cut into 1/2 pieces. If time permits before 9 minute timer, lightly reheat prosciutto back in the pan to ensure it's crispy.
Check the color of the puff pastry at 9 minutes. If you want to prep in advance, remove now and allow to cool, and place prosciutto on paper towel to cool, then into an airtight container in the fridge.
If eating today, add prosciutto to tops of pastry cups and return to the over 2-3 minutes or until pastry is golden brown.
Serve
Stilton and Portobello
4oz pack of sliced baby bello/portobellow mushroons
1/3 lb of Stilton Blue Cheese (or Gorgonzola. No firm Blues)
3 green onions
Dice mushrooms into 1/2 cubes (making 1 1/2 to 2 cups - raw) and saute on low heat with 2 tablespoons of olive oil.
Cut puff pastry sheet into 12 even blocks (see video for tips)
Spray pan(s) with non-stick spray lightly.
Place pastry dough piece in each hole and push down gently, allowing it to wrinkle and fold on the sides a bit.
Cut approx 3/4 inch/half tablespoon pieces of Stilton and place in holes on top of puff pastry.
Top with approx 1 teaspoon of mushroom mixture.
Once all are done, reserve what's left to adjust any needing more filling.
Put in oven and set timer for 9 minutes.
While waiting, cut green of the green onion into thin slices for garnish.
Check the color of the puff pastry at 9 minutes. If you want to prep in advance, remove now and place allow to cool before refrigerating.
If eating today, return to the over 2-3 minutes or until pastry is golden brown. Top with sliced green onion and serve.
S'mores
1 regular marshmallow for each up (I made 8)
1 bag of small milk chocolate morsels for baking
3-4 Cinnamon sugar graham crackers to top
Cut puff pastry sheet into 12 even blocks (see video for tips)
Spray pan(s) with non-stick spray lightly.
Place pastry dough piece in each hole and push down gently, allowing it to wrinkle and fold on the sides a bit.
Sprinkle approx 10 morsels in the bottom.
Place marshmallow sideways in the hole.
Sprinkle more morsels (8-10) on top, most will roll down the side.
Put in oven and set timer for 9 minutes.
While waiting, place graham crackers in a zipper bag and crush.
Check the color of the puff pastry at 9 minutes. If you want to prep in advance, remove now and place allow to cool before refrigerating.
If eating today, return to the over 2-3 minutes or until pastry is golden brown.
Once ready, sprinkle more morsels on top of browned marshmallow surface, then sprinkle graham crumb and serve.
