Shrimp and Pasta in 10 minutes (or less) and YES, it tastes great!
So a quick dinner is what you need? We've got you covered. All you need is some pasta, some peeled and deveined shrimp, and some fresh veggies to round it out. Recipe and video are set as a dinner for two.
Ingredients:
10-12 Colossal Shrimp
1/2 lb of Angel Hair pasta
2 cups of greens (spinach, swiss chard, baby kale or similar)
10 grape tomatoes (cut in half lengthwise)
1/4 cup of white wine
1/4 cup of chicken stock
2 tablespoons of butter
2 tablespoons of olive oil
Green onions sliced (white and green)
Flat leaf parsley rough chopped
1 lemon (zest and juice)
Prepare your pasta (or keto alternative) according to package.
- If cooking pasta, please rinse to cool and add a small amount of oil to prevent sticking
Put olive oil in large saute pan and heat on medium
Add whites of the green onion and sweat, do not brown
Add butter and melt
Add shrimp to pan and heat on one side
Once shrimp are halfway cooked through (turned pink on edges and white flesh), flip them, add wine and chicken stock
Increase heat to medium high
Add 1-2 teaspoons of lemon zest and juice from lemon
Add pasta
Add greens
Taste (salt as needed)
Add tomatoes
Mix gently and remove from heat
Add parsley to pan to lace the pasta
Twirl pasta on tongs, fork or otherwise for presentation on plate
Add pasta to plate, add tomatoes, greens and shrimp
Add green onion to garnish
Enjoy
